There are many health books that claim to know the secrets to preventing diseases, maintaining 25 year old skin at the age of 60 and balancing your emotions (which might attract someone better than your ex-mate to into your life), all at the same. 

Who do you believe? Do you take all the commonalities from the books and create your own version of healthy?

If you grew up in a household where vegetable or canola oil was used for cooking, would you have any reason to doubt that it could lead to heart disease?  If you read that coconut oil is high in saturated fat, you would never want to try it, not believing that it could actually be one of the healthiest oils to include your diet.

Health is not about low-fat or no fat, it's about using the right fats.  It's understanding that our food is grown differently today than it was 100 years ago, which is why we have to make adjustments to the grains we eat (by soaking before cooking them) in order for our bodies to digest them.
